Cathay Pacific Catering Services (H.K.) Limited is one of the largest flight kitchens in the world with the largest catering facility at Hong Kong International Airport, producing a daily average of 83,000 meals daily and serving over 50 international airline clients with an order fulfillment of up to 200 flights daily.

We are looking for high caliber professionals to fill the following position. This position will be based at our facility at Hong Kong International Airport.

Quality Process Manager

Responsibilities:

  • Supports the Head of Department to oversee the operation of Quality Process section in developing, implementing and managing the food safety and quality improvement systems

  • Performs risk assessments proactively and recommends mitigation strategies in respect of production quality through collaboration with management teams and observation of process controls in the Company

  • Resolves hygiene issues identified by internal/external audits, micro-tests, customer feedback, etc.

  • Follows up investigation results by performing root cause analysis and corrective actions for the continuous improvement of manufacturing methods

  • Identifies, implements and leads quality/hygiene improvement and new production process projects across the Company

  • Provides leadership and guidance to Quality Assurance Committee and partners with various Business Units to ensure adherence to the Corporate’s quality improvement best practices

  • Cultivates the Quality Excellence culture within the Organization through collaboration, motivation and identification of accountability with Business Units

  • Serves as the subject-matter expert on quality measures, including but not limited to Quality Rating and CMCP

  • Establishes and updates hygiene guidelines and procedures in compliance with the regulatory requirements, international standards and practices

  • Maintains, develops and improves the establishment and implementation of the Company’s Quality Management System and its documentation system, including HACCP and ISO Systems

Requirements:

  • Degree holder in Food Science, Food Technology, Quality Engineering or related disciplines

  • Around 7 to 9 years of relevant work experience in a sizable organization, preferably in food industry, with a minimum of 3 years of experience at managerial level

  • Knowledge and hands-on experience in managing food safety, HACCP, ISO 9001, ISO 14001 and/or ISO 22000 systems

  • Experience in establishing, implementing, maintaining, enforcing and evaluating a facility’s Good Manufacturing Practices, HACCP, Sanitation Standard Operation Procedures and Standard Operation Procedures’ programmes

  • Experience in project management and program development/implementation

  • Ability to establish realistic and achievable priorities, goals and objectives

  • Strong communication, presentation, interpersonal, and leadership skills

  • Proficiency in MS Office applications

  • Excellent in English and Chinese, both spoken and written

  • Candidate with less experience will be considered as Assistant Quality Process Manager

Accounts Assistant (Account Receivable / Account Payable)

Responsibilities:

Account Receivable Stream

  • Performs general accounting duties such as data entry, daily checking and reconciliations of revenue and invoice handling

  • Liaises with customers and/or relevant departments regarding invoicing/revenue matters

  • Prepares journal vouchers and assist in month-end reporting

  • Handles ad-hoc tasks as assigned by Supervisors

Account Payable Stream

  • Performs general accounting duties such as data entry, invoice checking, supplier statement reconciliation and stock-take

  • Liaises with vendors and/or relevant departments regarding payment and stock-take matters

  • Prepares journal vouchers and assists in month-end reporting

  • Handles ad hoc tasks as assigned by supervisors

Requirements:

  • Diploma holder, preferably in Accounting, Finance or related disciplines

  • Candidates with ACCA Level 1 or above will have an advantage

  • Experience in income audit and invoice handling or preparation of journal vouchers and invoice checking is an advantage

  • Excellent in Microsoft Office especially Excel

  • Self-motivated, detail-oriented, able to meet tight deadline and with strong sense of responsibility

  • Suitable candidates with more relevant working experience will be considered as Accounts Officer

Catering Services Officer (Private Jet Accounts)

Responsibilities:

  • Communicates with the assigned airline accounts to follow upon issues relating to menu queries and proposals, price indications, menu samples, food purchase and other ad hoc requests

  • Coordinates with internal departments on menu start-up and changes

  • Inputs menu specifications into internal IT system accurately and punctually

  • Assists in organizing meal presentations / audits and participate if required

  • Assists in achieving the profit margin target by setting prices in accordance with the company's directions

Requirements:

  • Diploma / Higher diploma holder in F&B, Catering or related disciplines

  • 1 to 3 years of working experience in catering, hotel F&B or event services

  • Hands-on experience in serving key accounts or business development in hospitality industry will have an advantage

  • Fresh graduates with relevant internship or part-time experience will also be considered

  • Out-going with sense of responsibility

  • Ability to work independently and under pressure

  • Good command of English and Chinese; Mandarin would be a definite plus

  • Driving license is preferable, but not a must

  • Shift duty may be required, depending the actual situation

Load Control Assistant / Catering Coordinator Assistant

Responsibilities:

Load Control Assistant Stream

  • Co-ordinate with customer airlines to update meals ordering related information such as flight schedule and special meals order etc.

  • Ensure all operational departments being updated on the last-minute change on meals ordering related information such as flight schedule and special meals order etc.

Catering Coordinator Assistant Stream

  • Ensure all catering items and meals on board are accurate and in good condition upon departure from the company

  • Represent the company to conduct checking with cabin crew to ensure all catering items and meals uplifted are accurate and in good condition

Requirements:

  • F.7 / Diploma holder in any disciplines

  • Detail-minds and Customer-oriented

  • Good communication skills in both Cantonese and English

  • 24-hour shift duty is required

Purchasing Officer (Food Products Category)

Responsibilities:

  • Achieves targets set by company regarding the cost and quality performance of assigned categories, as well as the relevant suppliers

  • Sources, assesses and selects products and suppliers

  • Negotiates with suppliers for best deals

  • Maintains and upkeeps the purchasing database and records

  • Responsible for source planning, conducting market research and developing the supply market

  • Investigates issues with products and suppliers, and coordinates for a solution

  • Measures and analyzes the performance of the assigned categories

Requirements:

  • Diploma / Higher Diploma holder or above in any disciplines

  • Working experience particularly in food purchasing is preferable

  • Strong problem solving, analytical skills and numerical ability

  • Good price negotiation and costing control skills

  • Good interpersonal and communication skills

  • Good command in both written and spoken English and Chinese. Putonghua would be an advantage

System Analyst

Responsibilities:

  • Assists the IT Solution Manager on various system requirement studies

  • Evaluates information gathered from multiple sources, reconciles conflicts, and decomposes the high-level user requirements into details for confirmation with the concerned parties

  • Works out the possible IT solutions with IT Solution Manager and business stakeholders

  • Documents the business and functional requirements for subsequent system implementation

  • Conducts the data analysis and database design under the requirement domains with performance and infrastructure constraints

  • Implements IT solutions according to the agreed project schedule and conducts post-implementation review

  • Provides on-going application system support and maintenance

  • Coaches Analyst Programmer and Programmer in both IT technical and application system aspect

Requirements:

  • Degree holder in Computer Science, Software Engineering or related disciplines

  • 3 to 4 years of relevant IT experience. Experience in logistic supply chain area will have an advantage

  • Proficiency in ASP.Net, PHP, HTML5, CSS3, Java/C#, C/C++, SQL and ER/Class Diagram

  • Hands-on experience in ORACLE database administration is preferable

  • Knowledge in web and mobile design will have an advantage

  • Self-motivated, goal oriented and be able to handle multi-tasks under pressure

  • Strong analytical, problem solving and trouble-shooting skills

Quality Assurance Officer (HACCP)

Responsibilities:

  • Ensures product quality are within the approved specification and in compliance with the corporate standards by handling daily food safety and quality assurance activities

  • Conducts hygiene audits and provides hygiene training

  • Addresses quality and hygiene issues and solves any problems found

  • Implements, monitors and improves quality and hygiene management systems

  • Participates in developing and delivering hygiene training for general staff

  • Assists to set up and upgrades HACCP / hygiene programmes

  • Assists to set up documentation system to record plant operations and quality control records

  • Assists in any ad-hoc projects as assigned

Requirements:

  • Degree holder in Food Science, Food Technology or related disciplines

  • Preferably with 1 year working experience in food processing QA role

  • Obtaining experience in setting up HACCP for central kitchen is an advantage

  • Hands-on skills in incoming and inline quality control

  • Good knowledge in hygiene control and QA documentation

  • Knowledge of ISO 9001 / ISO 22000 is preferred

  • Self-motivated, hard-working and independent

  • Proficient in PC operations, including nutritional analysis software and Microsoft Office

Sous Chef (Western & Asian Cuisine) / Night Shift Sous Chef

Responsibilities:

  • Supervise the daily operation of the kitchen, including food production, food quality control, presentation and hygiene management, to ensure the highest standards of productivity, consistency, product and quality assurance for all aspects

  • Maintain, improve and ensure food quality and consistency excellence to comply with proper food hygiene and safety requirements to meet or exceed customers expectations

  • Monitor and review production procedures to maintain and improve productivity to meet demand schedules and required production volume by establishing standardization at best operational efficiency

  • Support the culinary team with guidance by successfully applying experience and sound technical knowledge

  • Achieve excellence for the production team by training and coaching team members for continuous product consistency and improvements

  • Establish & maintain effective employee relations to create a dedicated team of professionals

  • Be instrumental in the meal and dish design development team to continuously upgrading and enhancing the current food quality

Requirements:

  • At least 15 years of culinary and management experience in hotels, restaurants or catering institutions

  • Competent knowledge of Chinese cuisine or Western cuisine and large-scale food production and handling processes

  • Demonstrates sound knowledge in authentic cooking methods for a wide variety of regional Chinese/ Western cuisine styles, creating exciting simple, tasty and seasonal dishes using freshest ingredients

  • Experience in managing large number of staff, high volume production, good planning and product development abilities

  • Excellent food presentation skills and possess upfront personality in presentation to internal and external customers

  • Practically familiar with HACCP, ISO and SOP systems and standards and advanced hygiene management

Senior Supervisor, Production Operations

Responsibilities:

  • Supervise the daily operations

  • Strict control in productivity performances

  • Ensures conformity of workplace hygiene, product quality and on-time performance

  • Precise inventory control of airline equipment to prevent shortage and production downtime

  • Liaison with internal and external parties for the provision of smooth processing and logistic flow

  • Maintain good production system. Handle frequent site audits by customers, internal and 3rd party auditors

  • Initiate and lead staff in continual improvement

  • Provide regular reports and presentations to management regarding area performances and rooms for improvement

Requirements:

  • Tertiary education, preferably in Industrial Engineering / Manufacturing related discipline

  • At least 3 years of related working experience with preference to food industry

  • Good sense of productivity improvement preferably with knowledge in LEAN Production management

  • Strong leadership and people management skills applicable in a labour intensive environment

  • Familiar with ISO9001, ISO14001, HACCP, LEAN, 5S and advanced hygiene management

  • Good command of spoken and written and Chinese and English

Culinary Design Chef (Chinese and Asian)

Responsibilities:

  • Supports the Assistant Manager, Culinary Design (AMCD) and be responsible for Chinese /Asian culinary activities for ensuring the highest standard of product quality to meet CX/KA customers’ expectation

  • Works closely with AMCD for the design and development of Inflight and Lounges of CX & KA Chinese and Asian menus by interacting regularly with CPCS Production, CX Services and Purchasing teams; translating customer needs and dining concept/proposition from CX Customer Experience Food & Beverage Team into new culinary ideas and update the meal library regularly

  • Supports AMCD in developing short and medium term Chinese/Asian culinary development projects to enhance CX/KA on-board and lounges’ products, processes and cost advantage as well as the long term development of the culinary proposition for CX/KA

  • Supports AMCD and menu planners for Chinese/Asian menu design, development and continuous improvement; coordinates with chef or caterers’ chef to plan and develop recipes/menus according to specifications within CX/KA cost budget

  • Acts as Culinary Consultant, be a focal point of contact to CPCS to coordinate with relevant CPCS kitchens and departments for new Chinese & Asian dish/product initiatives and menu development and run training sessions/workshops for CX/KA Inflight Customer Services team and Cabin Crew training by providing heating guideline/plating demonstrations/product information as well and culinary advice

  • Attends caterer on-site meal presentations at outport, providing feedback and culinary expertise/training as assigned by Catering Inflight and Lounge Manager as required

  • Supports AMCD for food/menu development programmes/projects and assists CX/KA menu set up for media events and internal events as required

  • Works with external chefs for new culinary concept/projects and promotional menu as required

  • Conducts menu audit from time to time with chefs in CPCS & HK LSG to ensure CX/KA menus’ excellent delivery by the caterers

Requirements:

  • Holding a Chinese Chef function with at least of 20 years culinary working practice gained within sizeable upmarket hotel establishments in authentic Chinese and Asian regional Cuisine, not only to be limited to Cantonese Cuisine

  • Possess a passion for fine food and an appreciation of Asian and traditional Chinese flavors

  • Demonstrates sound expertise in authentic cooking methods for a wide variety of regional Chinese and Asian Cuisine

  • Good knowledge in controlling food cost

  • Creative and accept changes

  • Must be customer and results focus

  • Good people management and communication skills

  • Good organizing and planning skills and ability to work with different stakeholders

  • Ability to work in a fast paced and deadline driven environment

  • Computer skills is required, preferably with knowledge of Microsoft Office

Senior Operation Planning Officer

Responsibilities:

  • Conduct in-depth analysis of operational (system, manpower, equipment) performance and define operational problems and / or improvement opportunities

  • Identify production and operation needs, and develop / implement resources plan to support operation, i.e. equipment supply vs demand, manpower shifts scheduling, etc.

  • Assist in developing and maintaining statistical and other quantitative analysis methods to support development of efficient material/staffing plans by processes. Maintain reports to measure results vs plan

  • Advise operation resources for realistic schedule and ensure resources are prudently utilized

  • Coordinate with different departments to implement resources plan and monitor progress

  • Monitor inventory level of materials and equipment

  • Perform ad hoc task as assigned

Requirements:

  • Degree holder, preferably in any operations management, business management or engineering related discipline

  • At least 5 years of relevant working experience in manufacturing operation/ process improvement, preferably with at least 3 years’ operational knowledge of manufacturing (including assembly/ process improvement)

  • Excellent project management, problem solving and analytical skills

  • Strong critical thinking and interpersonal skills

  • Proficiency in MS Office and statistical tools

Programmer (Web Developer)

Responsibilities:

  • Develops, implements and supports web-based business systems in a unique airline catering/ airport operation environment

  • Assists in system and database design

  • Prepares technical and support documentation

  • Handles applications and database performance tuning

Requirements:

  • Degree holder in Computer Science, Software Engineering or related disciplines

  • Proficiency in ASP.Net, HTML5, CSS3, Angular, C#

  • Proven experience with responsive designs

  • Hands-on experience in Oracle database development and mobile development will be an advantage

  • Hardworking and willing to learn

  • Self-motivated, problem solving and analytical skills

  • Good communication skills in both English and Chinese

  • Candidates with more experience in web based applications development will be considered as Analyst Programmer
