ALI OLI is a baking institution in Hong Kong serving high quality Western style baked goods for over 30 years.

Ali Oli operates a bakery cafe in Sai Kung and a Central Bakery /Catering Kitchen in Aberdeen, Wong Chuk Hang. 

The retail business is supported by the Central Kitchen which also provides services to a variety of wholesale clients, catering services, event services, and specialty cakes.

HEAD BAKER - BAKER

Job Responsibilities:

  • As a Head Baker, you are responsible for managing the Bakery section and the Bakery team of the kitchen/s while working closely with the Chef/KM. Additionally you will also be required to plan production and develop seasonal or special offerings (LTO’s).

  • Managing the daily production for orders received, and product quality

  • Responsible for quality control of outgoing deliveries of bakery products from the Central Kitchen

  • Responsible for ordering of ingredients for the baking team, cost control and cost management

  • Shared responsibility of the over-all kitchen/s environment e.g. tidiness, hygiene and cleanliness, and equipment maintenance.

  • Maintain and update the recipe card file, keep up with industry trends, and create new recipes as requested or required.

Requirements:

  • 2 years previous baking experience in a large intuitional bakery or hospitality operation.

  • Responsible, punctual, diligent, able to follow direction.

  • Immediately available is preferred.  

KITCHEN OPERATIONS MANAGER / CHEF

Job Responsibilities:

  • Management and supervision of all kitchen operations, daily communications meeting with all kitchen heads and junior staff to manage the day to day production plan and volumes.  

  • Manage relationships with clients and distributors and resolve comments, complaints, requests and any other issues promptly.

  • Manage kitchen staff and delegate tasks related to meal prep, cooking and delivering food to clients in a timely fashion

  • Daily management and preparation, bulk preparation of base product line, inventory management, overall kitchen hygiene and cleanliness.

  • Quality Control, responsible for quality control and tasting finished goods; making sure they are at the proper standard and are presented correctly before they go out to the client.

  • Ensure highest standards of safety, hygiene and sanitation practices are maintained in the kitchen at all times.

  • Daily, weekly and monthly monitoring and reporting on scheduling, payroll, inventory, sales, costs.

  • Maintain and update the recipe card file, keep up with industry trends, and create new recipes as requested or required.

Requirements:

  • 2 years previous management experience in a large intuitional kitchen or hospitality operation.

COOKS & BAKERS

Job Responsibilitie:

  • Weigh, measure, mix and prep ingredients according to recipes.

  • Check food and ingredients for freshness.

  • Work well under pressure and within the time limit.

  • Ensure that kitchen area, equipment and utensils are cleaned.

  • Ensure the highest standards of safety, hygiene, and sanitation practices are always maintained in the kitchen.

Requirements:

  • 2 years prior experience in related food and beverage service and food preparation positions.

  • Thorough experience with hot and cold food preparation.

  • Good working knowledge of accepted sanitation standards and health codes.

  • Ability to use slicers, mixers, grinders, food processors, etc.

  • Able to handle work in a fast-paced environment.

  • Culinary education or 2-4 year degree or foreign equivalency is preferred.

BUSINESS OPERATION ASSISTANT

Responsibilities:

  • Co-coordinate daily production in Central Kitchen, ensure products ordered are products delivered.

  • Co-coordinate and manage catering services to our Clients.

  • Handle daily documents and filings.

  • Liaise with internal departments and external parties issues.

  • Handle ad hoc tasks, projects, and reports as assigned.

Requirements:

  • A team player with relevant experience in F&B catering or production kitchen is desirable.

  • Good command of written and spoken English, Chinese.

  • Interested in Central Kitchen / Catering operation.

  • Good knowledge of Microsoft Word, Excel, and Chinese Word Processing.

  • Above average problem-solving skills, detailed-oriented, creative and very good interpersonal skill.

  • Immediate available is highly preferable.
